Rosemary
The flavor of rosemary is strong, warm and pungent, resinous and slightly bitter. Tastes like nutmeg and camphor. The aftertaste is woody, balsamic, and astringent. Can be accompanied with olive oil to fry vegetables. It is used with veal, lamb, and poultry.
